Key Lime Pie Recipe:

Makes 1 pie


Ingredients:

1 nine inch graham cracker crust

3 cups sweetened condensed milk 

1/2 cup sour cream 

3/4 cup key lime juice

1 tbsp lime zest


Directions:

1. Preheat the oven to 350 degrees

2. In a medium bowl, combine the sweetened condensed milk, sour cream, key lime juice, and lime zest and mix until combined. 

3. Then, take that mixture and pour it into the graham cracker crust. 

4. Bake for 5-8 minutes or until tiny bubble appear on the top of the pie. Don't let it brown. 

5. Once it is out of the oven, let it sit for 15 minutes. 

6. Then, put it in the fridge for a minimum of 1 hour. The pie can last 3-4 days in the fridge.

Berry Smoothie Recipe: 

Makes 1-2 servings

Ingredients:

1/3 cup apple juice (any juice works but apple is my favorite for smoothies)

1/4 cup fresh blueberries rinsed

5 large strawberries rinsed, leaves taken off, and cut into quarters for easier blending

3/4 of a banana

a small handful of crushed ice (optional)


Directions:

1. Add the ingredients into a blender in the order listed above

2. Blend until all the ingredients are blended well. The texture can be adjusted by blending less or more. 

3. Drink this healthy drink by yourself or with friends

Apple Pie Recipe: 

Makes 2 pies:


Ingredients:

2 recipes of pie crust

4 lbs apples

1/3 cup sugar

2 tbsp flour

2 tbsp lemon juice

1/2 tsp cinnamon

1/4 tsp ground nutmeg


Directions:

1. Preheat the oven to 425 degrees.

2. Take the dough out of the freezer and roll each piece out between two pieces of wax paper until thin.

3. Peel, core, and cut the apples into thin slices.

4. Add all the ingredients to the apples and mix until combined.

5. Take one sheet of wax paper off the crust and place in a pie pan. Take the wax paper off.

6. Put all of the filling in the pie pan.

7. Do the same thing you did in step 5 with the other half of the crust placing it on top of the filling.

8. Cut off excess crust around the edges and cut a slit in the middle of the crust to help with baking.

9. Bake for 10 minutes. Then, lower the temperature to 350 degrees and bake for 30 minutes or until golden brown.

10. Top with whatever you want. I like whipped cream and ice cream.

Blueberry Pie Recipe:

Makes 1 pie 


Ingredients:

1 recipe of pie crust 

1 tbsp lemon juice

3/4 - 1 cup sugar

4-8 tbsp cornstarch (4 for non frozen berries, 8 for frozen berries)

A pinch of salt

5 cup blueberries (fresh and frozen both work)


Directions:

1. Preheat the oven to 425 degrees

2. Take the dough out of the freezer and roll each piece out between two pieces of wax paper until thin.

3. Add all the ingredients to the blueberries and mix until combined.

4. Take one sheet of wax paper off the crust and place in a pie pan. Take the wax paper off.

5. Put all of the filling in the pie pan.

6. Do the same thing you did in step 4 with the other half of the crust placing it on top of the filling.

7. Cut off excess crust around the edges. 

8. Bake for 55 minutes or until the crust is golden brown. 

9. Once done, let cool and top with whatever you want or leave it plain. I like whipped cream and ice cream.

Pie Crust Recipe:

Makes enough for 1 pie.


Ingredients:

2 1/2 cups flour

1 1/4 tsp salt

3/4 cup vegetable shortening

3 tbsp butter

6 tbsp ice cold water


Directions:

1. Mix the flour and salt in a stand mixer with a paddle attachment until combined.

2. Add half of the vegetable shortening and mix until the mixture looks like cornmeal.

3. Then add the other half of the shortening and the butter and mix until well combined.

4. Slowly add the water until the mixture becomes a dough. 

5. Take the dough out of the bowl and divide it in half. Take each of those pieces and wrap them in plastic wrap. 

6. Freeze the dough for at least 15 minutes before working with it. This prevents tearing. The dough can be stored in the freezer for 3-6 months. 


Now time to make the pie!

Irish Soda Bread Recipe: 

Makes 2 loafs 


Ingredients: 

1 egg

4 cups flour

1/4 cup + 2 tbsp sugar

3 tsp baking powder

1 tsp baking soda

1 tsp salt 

1/4 cup oil

1 3/4 cups buttermilk

1/2 cup rasins (optional)


Directions:

l. Whisk all the dry ingredients (including sugar) until well combined

2. In a separate bowl, whisk all the wet ingredients (including the raisins) until well combined

3. In a stand mixer with a dough hook, add the wet ingredients to the dry ingredients and mix until well combined. The mixture will be a runnier version of a dough. Basically a thicker cake batter.

4. Preheat the oven to 400 degrees 

5.  On a greased baking sheet, pour two circles of the batter to make two loafs.

6. Bake for 35-40 minutes

Girl Scout Cookie Ice Cream Cups Recipe: 

Makes as much or as little as you want 


Ingredients:

Ice Cream flavor of your choice (I used vanilla)

Crushed Girl Scout Cookies (I used Thin Mints and Trefoils)

Any other topping you want (I used sprinkles)

cupcake liners (you can use bowls instead)

muffin tin (if you are using cupcake liners)


Directions:

1. Line the muffin tin with the cupcake liners.

2. Put some of the crushed cookies at the bottom of the liners.

3. Scoop some ice cream on top. 

4. Top with some of the cookies and/or any other toppings

5. Freeze for 30 minutes so the ice cream doesn't melt
